The source of the flavor in our meat is amino acids, such as inosinic acid, found in the protein of aged red meat that is the essential flavor of beef itself. The red meat of Tosa Akaushi cattle has a fine texture and offers a substantial taste because the animals are allowed to grow slowly, raised on the grass and water native to Kochi.

Unsaturated fatty acids, such as oleic acid, contained in fatty meat is a source of the special flavor particular to Japanese wagyu beef. It is now known that Tosa Akaushi has a lot of the AA type of the SCD gene which triggers the production of unsaturated fatty acids. These acids contribute to creating the unique clean taste and texture of Tosa Akaushi meat.
