Bounty of a clear stream and Mother Earth, products derived from Tosa Shimanto
Shimanto Shokuhin Ltd. is located 5km from the estuary of the Shimanto River. We make products using mainly locally produced ingredients - brackish water nori, ginger, yuzu citrus, pork and beef - from the Shimanto River watershed. Our company has limited facilities and a small number of employees. But it is precisely because we are a small company that our motto is "to do business diligently with flexibility" and to become a "special" company that satisfies consumers with reliable and safe merchandise.
*Please ask us about making private brand products.
Our president, Takatsune Kayo, who used to work as a chef, develops our products. We have two cookers, each with a capacity of 130kg, to make tsukudani, or preservable food boiled down in a specially blended soy sauce. Manual fixed-quantity fillers and automatic small fillers are used to make packages of tsukudani, which undergo boiling sterilization (under 100C) and are passed through a metal detector. Only packages that pass the entire inspection process are sold.

Shimanto Kawanori Tsukudani in Jars
Ideal for serving with freshly cooked rice!
The main ingredient of our tsukudani is nori (Monoareoma nitidum) from the Shimanto River. The flavoring ingredients are: Hatsukari Sweet Soy Sauce made from domestic soy and wheat through a special maturing process, wheat starch syrup, marine algae and powdered dried bonito. Because of the simple ingredients, the tsukudani is lightly flavored and not salty. No additives or chemical seasonings are used.
Shimanto Kawanori Tsukudani Sticks in Thin Tubes
Tsukudani sticks come in a container so they can be placed on the table easily.
The main ingredient is nori (Monoareoma nitidum) from the Shimanto River. Marine algae are used to add viscosity to the product. The base flavoring ingredients are soy sauce, wheat starch syrup and sugar. Tsukudani sticks are easy to use, so add one to your bento lunch box.
Shimanto Yuzu Miso
Children love the sweet flavor!
Yuzu citrus grown in the upper part of the Shimanto River is used to make this dipping type of miso. It has a sweet flavor because the only added ingredients are wheat miso, wheat starch syrup and sugar. Its flavor is a perfect match for freshly cooked rice. It makes vegetables, especially cucumbers, tastier, so we recommend it for use in salads.
Shimanto Pork Shigure-ni
This miso flavored pork makes cooked rice even tastier.
We use pork from Shimanto Town, located along the upper part of the Shimanto River. Specially blended miso and red-hot pepper seasonings are used to flavor the pork to make sweet and spicy Shigure-ni.
