Pole-and-line fishing for the ultimate freshness
A net is commonly used in many fishing grounds, but we perform only fishing in the fishing ground of Usa. Fish rub against fish when landed with a net. Therefore the fish own which showed rejection in a body coming in contact begins to act violently by stress, and the body is burnt with heat.
For Urumebiraki Sugata-sushi
Since it is for Sugata-sushi, we use round herring of the size of 70 g - around 100 g. We process it with the moderate vinegar condition that good freshness can realize (We finish it with processing within five hours after unloading).
Pasted round herring
You just defrost it and only make a dumpling and become usable as a dumpling for Tsumire stews. Because we make the paste in a fresh state, it has few smells. The ginger taste is included, but may add ingredient materials for preference.
Filet of round herring with vinegar
We process round herring of the size of 40 g - around 60 g, which is easy to use for finger sushi, with the moderate vinegar condition that good freshness can realize.
